In this quick chicken pozole recipe, canned hominy mingles with squash and kale for a veggie boost.
Cook, stirring occasionally until vegetables are softened slightly, 6 to 8 minutes.
Add stock and bring to a gentle simmer.
Cook until squash is mostly tender, about 6 minutes.
Turn off heat and stir in kale.
Ladle pozole into bowls.
Top each with remaining onion and a generous dollop of yogurt.
Serve with tortilla chips.
