“Wine alcohol is directly related to the amount of sugar available during fermentation,” Hoel said.
This results in lower sugar levels (and thus lower alcohol levels).
Let’s break that down further.
The remaining sugar that is not consumed in fermentation stays in the wine, creating a sweeter wine.
Then, the water and ethanol mixture is distilled, separating the two.
Instead, refine your search by starting with varietals that are known for their naturally low alcohol levels.
