They’re fresh tater tots!

This recipe was developed by Paige Grandjean.

Heat a large skillet over medium-high.

Add sausage and cook, breaking it up with a wooden spoon, until browned, about 5 minutes.

Add onion and bell pepper and cook, stirring occasionally, until tender, 8 to 10 minutes.

Whisk together eggs, milk, hot sauce, salt, and black pepper in a large bowl.

Arrange tots in an even layer in a lightly greased 3-quart baking dish.

Top with 1 cup cheese and the sausage mixture.

Pour egg mixture evenly over tots and top with remaining 1 cup cheese.

Bake until set in the middle, 50 to 55 minutes.

Let stand 10 minutes before serving.

Top with jalapeno and chives.
