If you have more herbs at the ready, mint and parsley will delight these rich, fragrant tacos.

Lean into the gyro route and swap pita bread for the tortillas.

Top with store-bought tzatziki, hummus, and chopped tomatoes.

This recipe was developed by Melissa Gray.

Add lamb, 3/4 cup onion, 1 teaspoon salt, and 1 teaspoon cumin.

Cook, stirring occasionally to crumble lamb, until browned, 5 to 6 minutes.

Using a spoon to hold back lamb, discard drippings.

Cook with water and harissa:

Stir 1/2 cup water and harissa into skillet.

Toss cabbage with remaining 2 teaspoons lemon juice and 1/4 teaspoon salt.

Assemble and serve:

Divide lamb mixture among tortillas.

Top with cabbage mixture, yogurt sauce, cilantro, and remaining 1/4 cup onion.

Greek yogurt sauce can be made two days in advance, stored in an airtight container in the fridge.
