And there is no better sheet-pan recipe to keep on hand than this one for shrimp fajitas.
After a quick bake and some time under the broiler, the result is a crowd-pleasing, Mexican-inspired meal.
Wrap the shrimp and veggies in warm tortillas, and serve with all the fixings.

Place a rimmed baking sheet in oven.
Wrap tortillas together in aluminum foil.
Toss together shrimp, peppers, onion, oil, and fajita seasoning in a large bowl.
Carefully remove hot baking sheet from oven; spread shrimp mixture in a single layer.
Place on top rack of oven for 6 minutes.
Remove baking sheet from oven and stir shrimp mixture.
Increase oven temperature to broil.
Place wrapped tortillas on bottom rack.
Squeeze 1 lime over shrimp mixture; stir.
Cut remaining lime into wedges.
