This shaved apple fennel salad recipe is a looker thanks to its thin delicate apple and fennel slices.
For a light meal, lay the apple-fennel salad on top of cooked grains like farro or quinoa.

Simply toss the cooked grains in olive oil and season with salt and pepper before scooping onto a platter.
