An herby aroma graces the nose before zippy ginger tickles the tastebuds in this light and refreshing spritz.

Serve alongside cheese, charcuterie, andtaralli, an Italian cracker if youre taking theaperitivoroute.

Ingredients

1/4cupgranulated sugar

2(1/4-in.-thick)slices fresh ginger (from a 1-in.

piece), lightly smashed

2(4-in.

)sprigs rosemary, divided

6Tbsp.

)prosecco or other sparkling wine

2Tbsp.

Bring to a boil over medium, stirring, until sugar dissolves, about 2 minutes.

Let stand for 15 minutes.

Remove and discard rosemary and ginger.

Refrigerate syrup for at least 30 minutes and up to 5 days.

Mix the drink:

Fill a highball glass with ice.

Add prosecco, club soda, 1 tablespoon rosemary-ginger syrup, and lemon juice; stir gently to combine.

Garnish with remaining rosemary sprig.

Make Ahead:Prep simple syrup up to five days in advance, and refrigerate in an airtight container.

If you have leftover syrup, use it to flavor sparkling water for a refreshing zero-proof soda.
