While this quick bread makes a satisfying snack, don’t overlook serving it at mealtime.
It’s a great accompaniment to ahearty fall soup, creamy pasta dish, or comforting bowl ofchili.
Ingredients
Batter
Nonstick spray
3cupsall-purpose flour
1tablespoonplus 1 tsp.
baking powder
1tablespoonground cinnamon
112teaspoonground ginger
12teaspoonground cloves
112teaspoonkosher salt
2cupspacked light brown sugar
1cupgranulated sugar
115-oz.
Whisk flour, baking powder, cinnamon, ginger, cloves, and salt in a large bowl.
Make a well in the center of dry ingredients and add sugar mixture.
Starting from the center, stir until blended.
Divide evenly among prepared pans.
Make the Streusel
Whisk flour, sugar, pepitas, and salt in a small bowl.
Add butter and stir with a fork until mixture is crumbly.
Sprinkle evenly over batter in pans.
Remove from oven and let loaves cool in pans for 10 minutes.
Remove loaves from pans and transfer to a wire rack.
Let cool completely, about 1 hour.
Freeze for up to 3 months.
To thaw, unwrap and set out at room temperature for 3 to 4 hours.
