This sweet-tart cocktail is perfectly balanced and perfectly refreshing.

These days, many bartenders are swapping in mezcal (you’re able to use either!)

and fresh grapefruit juice, which makes for a less sweet drink.

Paloma with Fresh Grapefruit Juice

If youre using tequila, a blanco works well.

We like salting the rim of the glass like you would with a margarita, but its totally optional.

kosher salt and 1/2 tsp.

chili powder on a small plate.

Cut 1 lime into quarters; cut another lime in half.

Rub a lime quarter along rims of 2 old-fashioned glasses.

Coat rims with salt mixture.

Fill glasses halfway with ice.

Juice remaining lime quarters and halves to equal 2 Tbsp.

Place juice in a cocktail shaker and fill halfway with ice.

Add 1/2 cup (4 oz.)

tequila or mezcal, 1/2 cup fresh grapefruit juice, and 2 tsp.

agave or simple syrup.

Cover and shake just until combined and chilled.

Top each glass with 2 to 4 Tbsp.

club soda and stir.

Garnish with strips of grapefruit peel.
