Mix up themushroomshere to make this recipe your own.

Cremini mushrooms are a great substitute for the shiitakes.

Or try using a combination of cremini, shiitake, and oyster mushrooms.

This recipe was developed by Melissa Gray.

Ingredients

3Tbsp.unsalted butter

5cupssliced fresh shiitake mushrooms (from 3 [5-oz.]

Add mushrooms; cook, stirring often, until tender and slightly browned, 8 to 10 minutes.

Add garlic and sage; cook, stirring, until fragrant, about 1 minute.

Cover and bring to a boil over high.

Stir in creme fraiche and salt.

(Sauce will continue to thicken as it stands.)

Top pasta and serve:

Serve pasta sprinkled with walnuts and topped with ricotta, if using.

Garnish with sage and, if using, crushed red pepper.

When reheating, add a little water or more vegetable broth to loosen the sauce.
