Its creamy, cheesy, and crunchy while bursting with protein.

First, youll cook ground beef until deliciously browned for maximum flavor.

It then marries theground beefwith a handful of cheese for good measure.

Serve it as a casserole or with more chips for scooping.

If you want to go all out, treat this casserole as you would a tray of nachos.

For a veggie boost, sprinkle with diced green and red peppers.

Heat oil in a large nonstick skillet over medium-high.

Add beef and break into small pieces with a wooden spoon.

Cook, undisturbed, until bottom side is browned, about 3 minutes.

Stir and cook until beef is cooked through, about 2 minutes.

Transfer to a small bowl, reserving 1 tablespoon drippings in skillet.

(Discard remaining drippings.)

Reduce heat to medium.

Add beans and tomatoes; bring to a simmer.

Stir in beef and half of cheese.

Scrape beef mixture into an 8-inch square or 2-quart round or oval baking dish.

Top with chips and sprinkle with remaining cheese.

Bake until beef mixture is bubbling and cheese is browned, about 15 minutes.

Top with cilantro and/or jalapenos and serve with chips, if desired.
