Mix together pork, scallions, 2 teaspoons jerk seasoning, and 1/2 teaspoon salt in a medium bowl.

Form pork mixture into 4 (1/2-inch thick) patties.

Sprinkle pineapple and onion with remaining 1/4 teaspoon salt.

Grill pineapple and onion, turning occasionally, until tender and charred, about 6 minutes.

Brush 1 tablespoon ketchup mixture on each patty until well coated; let stand for 5 minutes.

Place lettuce, if using, and patties on bun bottoms.

Top with 1 tablespoon ketchup mixture, pineapple, onion, and bun tops.

Serve with sweet potato chips, if desired.
