you’re likely setting yourself up for mushy or sticky pasta.
Generously salt the pasta water
Salting the water does more than just flavor your pasta.
You’ll want to put the salt in as soon as your water boils.
But you don’t have to sit over the pot and stir constantly.
The best way to test for pasta doneness is to actually bite into a noodle.
(We’re not talking about actual crunchyou want that happy medium between too crunchy and too mushy.)
That’s when you drain the pasta and add the sauce.
As you’re draining, keep a cup or two of pasta water in reserve.
