Creamy store-bought refried beans get a boost from sour cream and hot sauce.
For a protein-packed vegetarian version, call in tofu instead.
Drain and pat dry a 16-ounce package of extra firm tofu, and cut it into 1-inch pieces.
Marinate as you would the shrimp and cook for about 5 minutes.
