Directions
Preheat oven to 400F.
Heat oil in a large skillet over medium.

Add cumin and cook, stirring often, until fragrant, about 30 seconds.
Add corn and cook, stirring, until tender, about 2 minutes.
Remove from heat and stir in beans and 1 cup cheese.
Spread 34 cup sauce in the bottom of a 2-quart baking dish.
Top with remaining sauce and cheese.
Bake until bubbling and beginning to brown, about 20 minutes.
Let stand for 10 minutes.
Top with remaining sour cream and cilantro.
