Shop for ripe firm avocados that have some give when pressed, but are not too soft.

Avoid overly ripe avocados that squish when squeezed.

They’ll lose their integrity when mixing and yield a mushy salsa.

Green Apple Salsa

Ingredients

1 2/3cups (1/4-in.

)chopped unpeeled Granny Smith or Mutsu apple (from 1 large apple)

1cup (1/4-in.

Garnish with additional cilantro.

Serve immediately with chips.

For a sweeter salsa, and a hit of red, use a Honeycrisp or Fuji apple.
