Everything Salmon Skewers With Sriracha Aïoli

3Tbsp.everything bagel seasoning

1/4tsp.kosher salt

2Tbsp.canola oil

Directions

Cook rice according to package directions.

Meanwhile, stir together mayonnaise, vinegar, and sriracha in a small bowl; cover and refrigerate.

Cut bok choy into 11/2-inch pieces.

Cut white and light green scallion parts into 11/2-inch pieces.

Thinly slice dark green scallion tops.

Place salmon in a large bowl; toss with seasoning, pressing seasoning onto salmon.

Thread 1 salmon piece onto each of 8 (8-inch) skewers.

Add 3 bok choy pieces and 1 scallion white piece.

Repeat twice, then add a final piece of salmon to each skewer (for 4 pieces total).

Heat a grill pan over medium-high.

Brush with oil and add skewers.

Add sliced scallion greens to cooked rice and fluff with a fork.

Serve rice with skewers, drizzled with sriracha mayo.
