A supermarket shortcut is the secret to this Thanksgiving side dish that’s ready in just 30 minutes.
Herb and garlic soft cheese, such as Boursin, imparts tons of flavor with minimal effort.

It melts beautifully into sauteed onions and garlic before you add thawed frozen spinach and a handful of Parmesan.
Before you cook, be sure to really squeeze the spinach dry after thawing to avoid a watery casserole.
A sprinkling of buttery cracker crumbs is just the finishing touch you need for a very satisfying crunch.

Add onion and garlic; cook, stirring often, until softened, about 6 minutes.
Reduce heat, add seasonings and soft cheese:
Reduceheat to medium-low.
Add spinach, Parmesan, and cream:
Stir in spinach and 1/4 cup Parmesan.

If your skillet is not oven-safe, transfer the mixture to a 13-by-9-inch baking dish.
Top with crumbs and more cheese:
Sprinklewith cracker crumbs and remaining 1/4 cup Parmesan.
Bake and serve:
Bake until golden, 10 to 15 minutes, and serve.

Make Ahead
Prepare spinach mixture up to 2 days in advance and refrigerate in a baking dish.
Before baking, top with cracker crumbs and remaining 1/4 cup Parmesan.
