It calls for a store-bought pie crust, but you earn extra points if you make your own.

Swap out the Gruyere with one or more of your favorite cheeses, or add vegetables and proteins.

Fit the crust into a 9-inch pie plate.
Place on a baking sheet.
Heat 1 tablespoon oil in a large skillet over medium-low heat.
Stir in the parsley.
In a large bowl, whisk together eggs, half-and-half, nutmeg, and 14 teaspoon salt.
Stir in onion mixture and Gruyere.
Pour the egg mixture into the crust.
Bake until a knife inserted in the center comes out clean, 35 to 40 minutes.
Let sit for 5 minutes.
Drizzle greens with the remaining tablespoon of oil and sprinkle with 14 teaspoon each salt and pepper.
Serve with the quiche.
