Swirl the mixture using a butter knife making side-to-side and up-and-down motions.

Then use a gentle folding motion to bring some of the batter on the bottom up to the top.

Ingredients

Cake

Baking spray with flour

1 3/4cups 1/4-in.

piecesGolden Delicious or Granny Smith apples (from 1 or 2 apples)

1tsp.ground cinnamon

3/4cup plus 2 Tbsp.

Coat a 13-by-9-inch baking pan with baking spray.

Whisk in flour, baking powder, baking soda, and salt until nearly combined.

Fold in apple mixture.

Reserve 1/2 cup batter.

Spread remaining batter evenly in prepared baking pan.

Dollop mixture all over batter, then dollop with reserved 1/2 cup batter.

Swirl and fold into batter using a butter knife.

Sprinkle top with remaining 2 tablespoons granulated sugar.

Let stand in pan on a wire rack until mostly cool, 1 to 2 hours.

Drizzle glaze over cake.

Let stand until glaze is set, about 10 minutes.

Let return to room temperature or gently reheat before serving.
