One secret to quick andeasy weeknight dinners: always keep store-bought tortellini in the fridge or freezer.

Spinach, kale, and escarole would all work.

Have fun experimenting with different fillings beyond cheese, and dont be shy about trying ravioli instead.

Tortellini filled with spinach, mushrooms, or sausage would make for extra flavorful swaps.

Ingredients

Meanwhile, heat oil in a large pot over medium-high.

Break sausage into small clumps and add to pot.

Cook until deeply browned in spots, 4 to 6 minutes, stirring once halfway through.

Add spinach to pot; cook, stirring often, until beginning to wilt, about 1 minute.

Serve topped with cheese, rosemary, and pepper.
